THEY DESERVE THE LEG

Cuba, 60

In the heart of the Russafa neighborhood, between the memory of the old garden of a Muslim palace and the aroma of the rice finished iron, Ventura Font has created a space that is much more than a restaurant. VR Russafa was born from the need to keep traditional Valencian cuisine alive, the one we inherited from mothers and grandmothers, i what, with the rush of today's world, you run the risk of getting lost. The place occupies what was his grandfather's house-workshop, an artisan manufacturer of hydraulic tiles originally from Xaló (the Marina Alta). Of that artisanal spirit, Ventura maintains respect for its origins and love for things done well. From his mother and his grandmother, the most precious inheritance: the passion for good cuisine. VR Russafa's proposal is mainly Valencian, with some touches from other areas of Spain that are inspiring. From his corner, Ventura wants to perpetuate this legacy and make new generations aware and proud of their heritage. For him, the greatest pleasure is to see how those who sit at the table find a memory or a discovery in their dishes. recommend, without hesitation, baked rice or rice with beans and turnips, great unknowns outside our borders but authentic gems of Valencian cuisine. Ventura dreams of a future in which VR Russafa continues to grow without losing its essence. And it leaves a clear message to those who visit Valencia: recommend you to try our gastronomy in the right place. Only in this way will they be guaranteed to have tasted the real Valencia”. I couldn't agree more. MARÍA DE QUESADA
