Carnival celebrations travel across the country from north to south. If we do, we attend to its origins, much less refined and much more critical than today, this party gave way to a time where eating meat was considered sinful and excessive (as if the town ate a lot of it!). In the city of Valencia, Carnestoltes was so famous and so rebellious that the authorities did not hesitate to ban the party until it was tamed a little. Accompanying the festive excesses, the consumption of meat, month and a half after Christmas, is present at the table (of those who can!) on Thursday Llarder. Sweet and salty based on pork, eggs and other fats go to the table.
