This month we didn't want to focus on the Christmas holidays and all the gastronomy they entail (although we will claim again the kings until its recovery in Valencian society).
This month we choose a different product, fresh and has been among us for not too many years, but which has already become an inescapable among the ingredients of the modern kitchen. let's talk about theavocado, a tropical fruit but which has made a place in our Mediterranean diet.
To know a little more, We talk to Carlos Ayala, d’Avocados from Terreta.
With only 23 years, fa 5 years manages a field of more than 700 avocado trees in Picassent (l'Horta). Certainly, they are father - who planted them next door 16 years – he was quite a visionary. At that time, the avocado was an almost unknown fruit in Valencia. Carlos tells us between laughs that, when they started to harvest, their neighbors and friends asked them how they ate them or what they did with them. Ells, at that time, they didn't know very well either.
Follow with follow, these avocados of the Hass variety, with almost twenty years, they produce their fruits from November to April, more or less, depending on the climatology of each year. Therefore, buying avocados outside of these months is synonymous with not acquiring a fresh, zero kilometer avocado.
Carlos explains his philosophy of love and connection with nature. And he emphasizes to us that he prefers to give a good quality product than not reach the whole world without taking care of what he produces. For that, when we hear him talk about the avocados he grows, it could seem that he is talking about his little children that he is raising in communion with the earth. In fact, it is through his philosophy, and word of mouth, that people have gotten to know his avocados and buy them either privately or in shops and restaurants (see addresses below).
He also tells us about the qualities of the fruit, of the avocado, which is a perfect combination of antioxidants, fats, fibra i vitamines. It is given properties against cardiovascular diseases, they help to have a healthy body, healthier skin, a better view, among many more advantages. read this article if you want to know all its properties.
For that, since the best way to consume them is raw when they are ripe, it should be borne in mind that the fact of buying them from kilometer zero allows us that all the vitamins and antioxidants have still been formed in the tree. About this topic, Carlos points out that buying avocados from the other side of the world does not guarantee us, years on the contrary, that these avocados are fresh since they are in the ships in which they are transported, vora 30 dies, they are treated with gas to slow down their maturation. In addition, if we take into account the ecological footprint, buying avocados from the other side of the world is very unsustainable and, as we have seen, unprofitable for our body.
Apart from the Hass variety, which is what basically markets Aguacates de la Terreta, there are also other varieties called Bacon, Pinkerton o Lambhass, others. Although if you are interested in the whole world of avocado, Carlos organizes workshops in three stores (see addresses below) where to learn more about its properties, how to cook them, the particularities of each variety, apart from conservation advice.
to finish, he gives us his three favorite recipes with avocado. The first and easiest way to eat it sweet, as he tells us, it is to eat it by filling the hole left by the stone when you remove it with honey. It's a very healthy dessert or a more than healthy snack. The other two recipes are listed below!
Avocado and red bean hummus
in a bowl, mix the cooked red beans with an avocado (or an avocado and a half if you like it creamier). Add a squeeze of lime, sal, a teaspoon of oil, a clove of garlic and a little cumin. Grind everything well and it's ready!
Avocado pesto
There are two variants of this recipe: with basil or rocket. Choose the leaves you like best and mix them with garlic, a little salt, black pepper and a spoonful of oil. Grind it well and reduce it with a little broth from the same pasta to reduce it if it is too creamy. Bon profit!
