Fried flower artichokes with crispy ham

RECIPE

Ingredients (for four people):
4 Frying Sunflower Oil · Sunflower Oil 2 Serrano ham slices.

For mery sauce:
A handful of parsley · 1 Garlic clove · half lemon juice · olive oil.

Preparation:
· Clean the artichokes removing all the leaves until you leave some stem, Cut the tip, and make two cross cuts so that when they fry them they open in flower.
If you do not have a fryer (which would be the most comfortable way to cook them), Use a casserole. Pour abundant frying oil and, when it's hot, Add the artichoke until they are well fried on the outside. It will be the indication that they are very tender inside.
To prepare the mery sauce: Machar in a mortar a clove of garlic with a little salt and then add a handful of parsley. Keep crushing with the mortar and, next, Add the squeezed half lemon and a stream of olive oil. Mix well.
· Finally, Fry two ham slices on both sides in a pan with a few oil droplets. When they are toasted, let cool on a kitchen paper to absorb the excess oil and look very crispy.
· Serve with salt and fried ham shredded above, and mery sauce to taste. Spectacular seasonal dish!
