The Valencian winter festive calendar does not rest. Before the vernal equinox arrives, we enjoyed bonfires and meals typical of Sant Antoni. But February also starts strong with the festival of Sant Blai with a thousand and one forms - both savory and sweet - of bread, rolls and other pastries that travel all over Valencia, such as jays and glasses a la Jana, rolls (made from Lyonnaise pasta) in Borriana; blood oranges blessed in Alpont, the coquettes in Sagunto, spectacular rolls garnished and stuffed with potatoes or angel hair in Setaigües; Russafa's dry coquettes (Valencia city) or seagulls, santblaiets and the magnificent Torrent rossejat with sweet ball included. And more rolls in Algemesí (with pumpkin and green beans), to Alginet, in Beneixama, in Elche and Peñíscola; buns a Benidorm, Finestrat or Vila Joiosa, I am the original mother, as well as bread from Sant Blai in Gorga (with a flowering almond drawn with meringue), to Santa Pola and Utiel.
