Behind the natural wines The Zafra we find Mar Cabanes and Ignacio Mancebo, two technicians in agroecology who see in these family vineyards a possibility to return to the land and continue the winemaking tradition of the region. In the area of La Safra, in Monover (Middle Vinalopó), they have recovered Valencian varieties in danger of extinction such as the Valencian black grape, and they elaborate with careful and manual work a range of natural wines with other local varieties (marseguera i monestrell). The range of tastes and colors of its wines, called Nu because they are stripped of any addition other than grape juice, they range from the almost magical orange of a crushed Nu to the cherry red of Madara wine through a Valencian Nu magenta.
