Behind the natural wines The Zafra we find Mar Cabanes and Ignacio Mancebo, two technicians in agroecology who see in these family vineyards a possibility to return to the land and continue the winemaking tradition of the region. In the area of ​​La Safra, in Monover (Middle Vinalopó), they have recovered Valencian varieties in danger of extinction such as the Valencian black grape, and they elaborate with careful and manual work a range of natural wines with other local varieties (marseguera i monestrell). The range of tastes and colors of its wines, called Nu because they are stripped of any addition other than grape juice, they range from the almost magical orange of a crushed Nu to the cherry red of Madara wine through a Valencian Nu magenta.
