Rere els vins naturals The Zafra trobem Mar Cabanes i Ignacio Mancebo, dos tècnics en agroecologia que veren en estes vinyes familiars una possibilitat de tornar a la terreta i continuar la tradició vitivinícola de la contrada. Al paratge de la Safra, a Monòver (Vinalopó Mitjà), han recuperat varietats valencianes en perill d’extinció com el raïm valencí negre, i elaboren amb un treball acurat i manual una gamma de vins naturals amb altres varietats locals (marseguera i monestrell). El ventall de gusts i colors dels seus vins, anomenats Nu perquè estan despullats de qualsevol afegitó que no siga el suc de raïm, fluctuen del quasi taronja màgic Nu brisat al vermell cirera del vi Madara passant per un magenta Nu valencí.
