La Cantina de Russafa is not a bar or a restaurant in use. It is a restaurant with memory, neighborhood awareness and vocation. Behind the project are Eva and Jaume, who found in El Patio de Russafa a second chance, a soulful space where to start again after leaving a previous business in Cornellà de Llobregat. From the first moment, they were clear that they wanted to make a neighborhood and make a community. The Cantina dignifies the history of the place and its traditional function: to feed, care and support. Its cuisine is "from the Horta to the plate", based on local produce, in direct work with the farmer(e)s, fisherman(e)s are craftsman(e)s, and in the recovery of the popular recipe. A living kitchen, changing, improvised, that puts everyday gastronomy and enjoyment at the center. Families from the neighborhood eat here, lifelong neighborhood, but also many people who work in the hospitality industry. With an atmosphere that welcomes and invites you to stay, The Cantina has become a space where different realities come together. More than competition, they practice brotherhood. Social commitment is part of its DNA: when Valencia experienced difficult times like the dana, The Canteen was present, cooking, organizing and becoming a point of support for volunteering and the neighborhood. Today it remains a place where things happen, where we talk about social justice, of food sovereignty, of culture and future. His dream is clear: be seed. To develop a way of understanding gastronomy rooted in the territory, sustainable and human. I, if one day it comes, to create a gastronomy school that trains professionals committed to gardening, trades and the community.
