Elixir café is the story of three brothers(e)s who were born in Colombia and, laps of life, they ended up living on the ground. Roots with coffee soil, the passion for the quality of the product and the desire to take care of the producing families of origin and the planet, have made it possible for us to taste their unusual "elixirs" today in a more than beautiful corner of the Russafa Market. María, Isabel and Carlos Restrepo have introduced the capsules to Spain 100% compostable and compatible with the giant Nespresso, because they realized that seven out of ten people use capsules and that's all 10 % of them is recycled. A barbarity. They have even more merit because when they were going to open the place, the pandemic arrived and they have withstood the whirlwind thanks to the loyal clientele, selling on the Internet in Valencia and the Peninsula. This family is happy sharing coffee knowledge and culture with the neighborhood and they tell us that the king of the house is Colombia coffee, cultivated by two hundred families at 2,600 meters of altitude next to the Galeras volcano (Nariño). My recommendation is the cold brew filtered by him(e)s and bottled by Tallat, a friendly local business located in El Cabanyal. I like Elixir that they want to hang out with other coffee makers. They say that once you taste specialty coffee there is no going back; I say I need an Elixir coffee tap in the kitchen. MARÍA DE QUESADA
