Neapolitan noodles

RECIPE

Ingredients:
100 gr. of noodles per person 500 gr. raw pear tomato, peeled and chopped · Basil · Two cloves of garlic · Grated Parmesan cheese · Olive oil · Salt · Sugar.

Preparation:
· Heat water and when it starts to boil add the noodles. Cook until al dente.
· While, in a casserole, pour a splash of virgin olive oil, sauté the sliced ​​garlic and, before they take color, add the tomato with a little salt and a generous spoonful of sugar to remove the acidity.
· Let it cook for about twenty minutes over low heat and stirring constantly until you have a thick sauce.. Then add the basil leaves, Turn off the heat and… ready to serve!! The sauce can accompany noodles or any other pasta, and you can sprinkle a little grated parmesan cheese.
