Ingredients:
100 gr. of noodles per person 500 gr. raw pear tomato, peeled and chopped · Basil · Two cloves of garlic · Grated Parmesan cheese · Olive oil · Salt · Sugar.
Preparation:
· Heat water and when it starts to boil add the noodles. Cook until al dente.
· While, in a casserole, pour a splash of virgin olive oil, sauté the sliced garlic and, before they take color, add the tomato with a little salt and a generous spoonful of sugar to remove the acidity.
· Let it cook for about twenty minutes over low heat and stirring constantly until you have a thick sauce.. Then add the basil leaves, Turn off the heat and… ready to serve!! The sauce can accompany noodles or any other pasta, and you can sprinkle a little grated parmesan cheese.
· Simple and fresh recipe for this summer that is already getting tight but is not going to stop us from continuing to move. And why not do it to the rhythm of Johnny Nash with his I’m movin’ on.
