At Casa d'Aragona the dishes tell stories: he paccheri with Neapolitan ragù takes us to a family Sunday in southern Italy, where the pots cook for two days the veal, the pasta remains al dente and the family hugs; the pizza, that gives off the aroma of an artisanal oven built with materials from Vesuvius, takes us to a busy street in Naples, to a gathering of friends in which a perfect dough is tasted and, about her, raw materials from local artisans cared for like precious stones. These stories come to us in a magical atmosphere, where the candlelight, the remains of the Valencian wall, the images of paintings by Caravaggio or Da Vinci and opera music surround us, giving us a unique moment that evokes the history and elegance of another time. Casa d’Aragona is love for the gastronomic heritage of southern Italy, and that love is felt, because it raises the dignity, the pride and truth of Italian cuisine to excellence. MADAME G.
