We return to Vinalopó Mitjà, specifically in Monòver, to introduce you to the Lépol project of the Los Molinos cheese factory. Loli, single woman entrepreneur, formed more than a decade ago in the production of artisan dairy products, shares the cheese factory with Juan Luis, shepherd in charge of a flock of goats of Murcian granadine. They have a store in Monòver, but they distribute with home deliveries throughout the Valencian geography. They started with the fresh and brull cheeses with freshly milked goat's milk and now they have a variety of cheeses cured with red pepper, muscat, romer i —our favorite— with Alicante rudder (Thymus moroderi), also called “sing”.
