Valencia will meet 10 al 28 June some of the gastronomic trends that are renewing Mexican cuisine today. The Saler Shopping Center will host Viva México Fest, an event that will feature tacos, nachos, fajitas, tamales, enchiladas, quesadillas and other emblematic recipes worked under a new gastronomic perspective. The creators of The Champions Burger have managed to put together 19 days in the same space to eight of the most awarded specialized restaurants in Spain that are making preparations with current techniques, new selected ingredients and a very careful execution to offer Mexican food that combines tradition with innovative ways of working on flavor.
Valencians will have at their disposal tortillas made with a variety of corn selected for their variety and texture, especially creamy avocados, chili peppers like chipotle, guajillo or pasilla, worked with fresh aromatic herbs and combinations that give a different touch to each recipe. Sauces will appear in more precise versions and more refined mixtures. Valencia will be represented by El Huey, reference of Mexican street cuisine with a proposal based on cochinita pibil, new, traditional marinades and mexican chilies. And La Patrona de Tijuana will bring closer the gastronomy of northern Mexico through its emblematic border tacos and its homemade sauces.
From Castellón, Los Chamacos arrive with the “Best taco in Spain 2025”. They represent the most awarded Mexican cuisine of the moment with their renowned signature tacos, that combine marinated meats and fish, Mexican chili marinades, guacamole and pickles.
Los Coruñases Taquería Niño Rey, with several awards for “Best taco in Galicia”, They will land with a proposal made with slow-cooked meats. Located in Madrid, Kotaco will provide a creative and contemporary vision of the taco tradition, while Valletako, “Best taco in Madrid 2025”, will present its commitment to handmade nixtamalized corn tortillas, long-cooked meats and fresh cilantro.
Costera MX will arrive from Vigo, with recipes inspired by Mexican coastal cuisine and fresh produce as the protagonist: aguachile seafood, citrus and sauces made with Mexican chili peppers. Complete this selection Piñata Cantina, from Barcelona, with meats marinated in annatto and pickled onion.
With this selection of award-winning proposals and new styles, Viva México Fest will turn the Saler Shopping Center into one of the gastronomic spots in June in Valencia, so that the public can try the variety of formats, techniques and flavors that are being worked on today in Mexican cuisine.
