The construction of taste. By Carles Tarrassó

The La Nau Cultural Center of the University of Valencia inaugurates Hui, to them 20 hours the artistic installation of Carles Tarrassó, entitled: 'The construction of taste. Perspectives on gastronomy and design ’. This show that can be visited in the open room until next 28 of September, It is part of the extensive program of activities that the UV has organized on the occasion of the exhibition 'Medieval Gastronomy. The Book of Sent Soví and the kitchen in the fourteenth and fifteenth centuries, that shows for the first time to the public 'Sent Soví', The first known recipe book in the Iberian Peninsula and that preserves the Historical Library of the University of Valencia.

This artistic proposal is born of a personal reading that the artist himself has done on the Book of Sent Soví (1324). The project emphasizes the idea of taste as a construction modeling by social and cultural context and personal background. Far from understanding gastronomic taste as an innate and permanent element, almost essentialist and closely linked to issues such as identity and class, Here is claimed as a polyhedral and changing reality.

From this positioning, The installation proposes a game of perspectives, Where the visible elements - all of them linked to the preparation and service of food - alter their canonical appearance and vary depending on the point of view of the visitor. Besides, Sensory immersion is important through a palette of aromas that moves us to the Universe of Sent Soví. A palette that, For the palate of the present, Sometimes it is strange and sometimes family, Which speaks, precisely, of changes and permanence in the historical construction of taste.
